Rosół’s origins are deeply rooted in Poland’s agrarian past, where it was traditionally prepared as a hearty Sunday meal. This comforting soup is beloved for its rich broth and tender chicken, often served with noodles and garnished with fresh herbs. Making homemade rosół is simple, and this recipe guides you step-by-step to achieve a delicious, homemade taste.

Preparation Time: 10 minutes

Cooking Time: 2 hours

Servings: 6

Ingredients:

  • 1 whole chicken (about 1.5 kg or 3.3 lbs): The base for a rich broth.
  • 2 large carrots, peeled and cut into large pieces: Adds sweetness and flavor.
  • 1 large parsnip, peeled and cut into large pieces: Adds unique flavor.
  • 1 leek, cleaned and cut into large pieces: Adds depth to the broth.
  • 1 large onion, peeled: Adds flavor and color when charred.
  • 2 celery stalks, cut into large pieces: Adds aroma.
  • 4-5 peppercorns: For seasoning.
  • 2-3 bay leaves: Adds aroma.
  • A handful of fresh parsley, plus extra for garnish: Adds freshness.
  • Salt and pepper to taste
  • 8-10 small potatoes, peeled and left whole: Traditional accompaniment for rosół.

Instructions:

1. Prepare the Chicken and Vegetables:

  1. Clean the Chicken: Rinse the chicken under cold water, removing any excess fat or leftover feathers. This ensures a clean, clear broth.
  2. Prepare the Vegetables: Prepare all the vegetables by washing and cutting them into large pieces. This ensures they impart their flavors fully into the broth.

2. Cook the Broth:

  1. Combine Ingredients: Place the chicken, carrots, parsnip, leek, onion, celery, peppercorns, bay leaves, and parsley in a large pot. Add enough cold water to cover the ingredients. Starting with cold water helps draw out the flavors.
  2. Bring to a Simmer: Place the pot over medium heat and bring it to a gentle simmer. Skim off any foam that rises to the top using a spoon. This process, known as “skimming,” helps create a clear broth.
  3. Cook the Broth: Reduce the heat to low and let the broth simmer gently for about 1.5 to 2 hours, partially covered. This slow cooking allows the flavors to meld together beautifully. Check occasionally and continue skimming any foam.

3. Strain the Broth:

  1. Remove the Chicken and Vegetables: After cooking, remove the chicken and vegetables from the broth using a slotted spoon. Save the chicken and vegetables for later, you will use them to serve with, especially the chicken and carrots.
  2. Strain the Broth: Pour the broth through a fine mesh strainer to remove any remaining solids. This ensures a smooth and clear soup.

4. Cook the Potatoes:

  1. Cook Potatoes: In a separate pot, place the peeled potatoes and cover them with cold water. Add a pinch of salt and bring to a boil over medium heat. Cook until tender, about 15-20 minutes, then drain and set aside.

5. Assemble and Serve:

  1. Shred the Chicken: Once the chicken is cool enough to handle, shred the meat into bite-sized pieces, discarding the bones and skin.
  2. Season the Broth: Taste the broth and season with salt and pepper to your liking. For an extra touch of flavor, add a sprinkle of fresh parsley.
  3. Serve: To serve, place a portion of shredded chicken and whole boiled potatoes in each bowl. Slice carrots and add them to the bowl. Ladle over the hot broth. Garnish with fresh parsley for added flavor and presentation.

  • Char the Onion: For added depth of flavor, char the onion by placing it cut side down in a hot pan or over an open flame until browned.
  • Simmer Gently: Avoid boiling the broth vigorously, as this can make the soup cloudy. A gentle simmer ensures a clear and flavorful broth.
  • Add Fresh Parsley: Adding fresh parsley towards the end of cooking or as a garnish enhances the flavor and freshness of the soup.
